Born out of a collaboration with Cavalier Brewing to create Red Rum & Raisin IPA beer, experiment number three from Rum Diary involves macerating sultanas and raisins in a proprietary aged Caribbean rum. The fruit base is supported by layers of coffee, cacao, cinnamon, orange and a touch of Spanish chilli.Tasting note: Like a liquid rum-ball, the entry highlights the base spirit before a rush of cocoa, raisin cake and sweet spice. Mid palate shows excellent length with a juicy, fruity succulence through the fresh, tangy finish. Very natural. Great flavour definition. 42% Alc./Vol.
