De Saint-Gall Le Tradition Champagne Premier Cru
The largest vineyard owners in the Cote des Blancs, Champagne de Saint-Gall is the creation of the Cooperative Union Champagne, founded in 1966, which consists of growers who only hold Premier & Grand Cru Vineyards. Produced from a blend of 70% Chardonnay and 30% Pinot Noir.
A buoyant and fluffy mousse holds well over a pale straw coloured base that has flecks of gold around the edges. A very fine bead showing good persistence. Excellent aromatics with baked bread, citrus and yeast lees leading the way. Subtle toast and almond notes ensue. Well meshed flavours of yeast lees, baked bread and citrus overlay an oily toast and almond back drop. Airy feel with good tension, crisp acidity and a refreshingly savoury aftertaste.

Light straw-gold colour. Rich nose of bruised pears, honey and butter on toast. A full style, quite weighty with its rich golden fruits and toasty lees development all on show. Great length; there’s ample acidity to keep it driving while the fine mousse ensures both creaminess in texture along with refreshing lift to the dry finish. A complex delight to enjoy and will be equally at home with food as without. (Diam)
