This is very dry and chalky with lemon-rind and dried-pear character. Medium-fine bubbles give form to the wine. It’s full and flavorful with a nice, dry finish. Drink now.

A minerally version, with accents of petrol and brine on the nose transitioning to flavors of crunchy pear, candied lemon zest and almond biscotti on the palate. It's fresh and balanced, with a crisp, lacy mousse and more mineral character singing on the finish.
