Azienda Agricola COS was founded in 1980 in the town of Vittoria, located in the southeast of Sicily. Championing indigenous grape varietals since their inception, today they are one of the finest producers on the island. Pithos Bianco is 100% Grecanico produced from 12-year-old vines thriving in red, limestone-rich soil. The wines undergo wild fermentation on skins and are matured in Amphora, otherwise known as "Pithos".
