Fermented in old French oak and kept on lees for 7 months. Bright pale straw colour with a watery hue. Herbaceous grassy scents mix with asparagus, unripe gooseberry, lightly smoked dried herbs and citrus. Texturally full and well rounded in the mouth, ripe gooseberry and citrus fruits infused with dried herbs have a smoky gun flint like overlay. Some grassy asparagus characters sit in the background. Finishes dry with crisp acidity and a lingering smoky herb and grassy asparagus aftertaste.
