The excellent cool autumn conditions for the 1997 vintage allowed the fruit to fully ripen and resulted in a higher yield than 1996. The wine was fermented in shallow open fermenters, hand plunged and basket pressed. It was then matured for 1 year in a combination of 80% Amercian Oak and 20% French oak.Bright deep crimson colour. The nose displays aromas of black pepper and spice. The palate is elegant, yet displays plenty of rich ripe fruit, soft tannin structure and long peppery aftertaste. Cellar 5-10 years. 13.0% alcohol volume.
