Launched in 2013 and produced at G&J Distillers, one of the world’s oldest gin distilleries, Pinkster was developed by Stephen Marsh after he recognised what he felt to be a gap in the market for a different kind of gin.

Pinkster is composed of just five botanicals (most gins seem to be well over ten nowadays), only three of which are disclosed. Juniper, black peppercorn and most notably, raspberries are key. The raspberries are steeped in triple distilled spirit giving the gin a dry yet subtle berry flavour. They're also infused in the gin after distillation, contributing a subtle pink hue. Incidentally, the raspberries, albeit slightly intoxicated, are then recycled! They sell in farm shops and food halls as "Boozy Berries". Reports have it that Pinkster makes a refreshingly different G&T, with the delicate flavour appealing both to seasoned gin drinkers and recent converts.

Tasting note: Clear with a very pale straw blush. Yields frail aromas of raspberry herb tea and muted white pepper with the juniper indiscernible. Follows through with a silky textured, light-bodied profile offering meek piney-juniper flavours and a brisk raspberry jube finish that echoes in the aftertaste. A feather-weight, contemporary gin that needs more juniper input to balance. 37.5% Alc./Vol.
