Lark Rum Island was developed by Ross Dinsmoor early in 2008 as Tasmania's first commercial Rum release in over 160 years. Produced from Queensland molasses, Larks do a slow fermentation for up to 3 weeks and then carefully double distill and finish the rum in a small batch 500lt copper pot still. French Limousin barrels that were used previously for aging port by the Seppeltsfield Winery in Barossa Valley are reassembled into 100 litre barrels to accelerate maturation. Matured for two years or more, it's only bottled “when it tastes right” rather than at a specific age.

Described as "a Scotch-and-cigar lover’s rum." this small cask aged, higher proof bottling (55% Alc./Vol.) is a limited edition. We have less than 10 bottles available.
