Located in Chiba on the coastal outskirts of Tokyo, Yoshida Shuzo was established around 1830 and produces sake mainly for local supply. Being very particular about the quality of the rice milling they perform all polishing in house, with the junmai taking around 8 hours, while the ginjo takes around 18 hours.

Tasting note: Pale Champagne in colour. Clean and pure on the nose, with floral aromas of honeysuckle and jasmine, along with some faint earthy notes. The palate is well balanced, with a mix of green fruit, gooseberry and custard apple, a hint of meringue and mushroom flavours. Quince spice on the finish is rounded out with a touch sweet richness. An elegant style of sake, fresh and approachable. Serve chilled or warm.
