Sotol is the northern cousin to Tequila and Mezcal. Made from the so called "Desert Spoon" plant ('sotol' in Spanish), found in the Chihuahua desert and further north in New Mexico and Texas, this prickly evergreen can take between 12 and 15 years to mature, at which point, just like Tequila, it’s harvested, the heart is cooked and the juice is fermented and distilled with some expressions barrel aged. In international markets at present, 'Hacienda de Chihuahua' is one of the most prominent brands.

Tasting note: Bright straw gold. Offers up fragile scents of beeswax and capsicum and follows through to a dilute delivery including traces of sap and sweet smoke followed by a delicate beeswax, lanolin and white pepper flourish; hints of green capsicum in the aftertaste. 38% Alc./Vol.

Other reviews... The aroma only offers reluctant scents of sandy earth and salt. The palate entry is limp and sap-like; the midpalate remains timid and lacking in depth of taste. Ends meekly. A vodka-like sotol without much sense of agave. 85-89 points - www.winenethusiast.com
