Four Pillars Distiller Series 01 Cousin Vera's Gin (700ml)

Four Pillars' choice for the first of their 'Collaborative Distiller Series' is Santamania Destileria Urbana in Spain. The two have a lot in common (their stills, commitment to craft distilling and innovation). Four Pillars have created a Yarra-style Spanish gin in their Wilma and Jude stills and named it 'Cousin Vera’s' as a tribute to Wilma’s transcontinental cousin. More than just a name, it brings together Spanish botanicals (purchased in Madrid) and native Australian ones with a neutral Australian grape spirit base.

According to Four Pillars, the aromatics are bright, savoury and clean with a slight citrus spike. Olive leaf, fresh rosemary and crushed coriander sit above a solid base of juniper. The savoury notes carry on to the palate and are supported by pine needles, white pepper and a textural almond note. 42.8% Alc./Vol.

Very small allocation. These limited editions tend to sell apace so grab a bottle sooner than later.
