Historically, the Strawberry has been a much prized delicacy. Their savor and aroma can be especially appreciated in this exceptional liqueur from the famous Burgundy liqueur company, Domaine Sathenay. The Domaine is owned by Baron Caius Durfeld, and has been in the same family for Centuries. Located in the heart of Burgundy's Cote de Nuits, the Estate covers over 850ha, most of which is used for corn production, however 25ha are set aside for blackcurrants, which are regarded as the finest in France, particularly for the production of Cassis.

Whilst the Baron's Estate is regarded as France's finest producer of Cassis, he has also constructed an ultra modern production facility for the production of high quality fruit liqueurs. The Estate produces strawberry, plum, peach and raspberry liqueurs as well as cassis. The raspberries, strawberries and peaches are hand harvested whilst other fruits are machine harvested. Any fruit not required for immediate production is frozen.
In order to produce intense liqueurs, the fruit is macerated in high quality alcohol (98% proof) for a period of three months. The maceration takes place in stainless steel tanks, and the higher the proof of the alcohol, the more successful the maceration process. After the maceration is completed, the fruit is gently pressed using a pneumatic press - settled and then racked.
If a crème style of liqueur is required the liqueur base is sweetened with crystalline sugar - 500 gm/litre for cassis and plum (mure). 300 gm/litre for strawberries and peaches, and 330 gm/litre for raspberries. Domaine Sathenay do not use stabilizers or artificial flavourings. Should flavouring be required the only natural flavourings, made from the liqueur in question are used.
The result is that these liqueurs are renown for their purity of fruit flavours and intensity. 18% Alc./Vol. No tasting notes available.

Classic Cocktail: The Daiquiri Strawberry

The Daiquiri is a family of cocktails whose main ingredients have traditionally been rum and lime juice. There are several versions however, with some like the Strawberry Daiquiri having a texture similar to a smoothie. Originally the drink was served in a tall glass packed with cracked ice. A teaspoon of sugar was poured over the ice and the juice of one or two limes was squeezed over the sugar. Two or three ounces of rum completed the mixture. The glass was then frosted by stirring with a long-handled spoon.

40 ml White Rum

20 ml Sathenay Fraise des Bois Strawberry liqueur

3-4 stawberries (depending on their size)

40-60 ml lemon juice

a cup of crushed ice

Method: Mix in a blender until you have a thick mesh. Serve in a cocktail glass.
