"We have to cultivate extraordinary things, we have to invite weirdness in our life." These words of Tomas Estes can be a strong message for those who are trying to bring something new and fresh to the bar scene. Following a 'eureka moment', this world renowned tequila expert has collaborated with producer, 'Ocho', to launch a new style set to revolutionise the traditional Mexican spirit.

Essentially, Ocho takes its unaged and already highly regarded Blanco and infuses it with fibres of the pure cooked agave that the tequila is made from. The agave pieces are then filtered out using cellulose cartridges, resulting in a lightly golden appearance with added intensity of flavour (despite its colour, it still carries the word 'blanco' on its label). It has been recognised by the Consejo Regulador del Tequila (the CRT - the tequila regulatory council) as an 'infusion de agave' and has been approved by Instituto Mexicano de la Propiedad Industrial.

Estes, who has experimented with tequila infusions for decades, now expects Curado to herald the start of a new category of agave-flavoured tequilas at varying intensities. "With this first product I was seeking just enough cooked agave to give it an accent - I didn't want it too sweet. I am now looking at doing a 'demi sec' and a very sweet variant which could act as an instant Margarita mix and require only the addition of fresh citrus."

The product is named as a tribute to the way indigenous Mexicans refer to their pulque (a mildly alcoholic 'beer' made from agave) as flavoured or 'cured'. Expected to arrive in Australia soon.

Tasting note: Bright pale gold appearance. The perfumed bouquet yields a ripe, semi sweet agave profile that includes white pepper, black olive, dill pickle and ripe lemon alongside undertones of praline and cocoa. Light, semi sweet entry expands into a concentrated but soft, juicy profile of beeswax, dill pickle and green wood. Finish is nicely balanced to the earlier sweetness as salt, white pepper and roasted pineapple linger with excellent length. Successfully preserves the vibrancy and complexity of quality Blanco while adding a texture and richness associated with aged tequilas. 40% Alc./Vol.
