Umeshu is a traditional Japanese liqueur made from ume fruit, which is actually a kind of apricot, not a plum as is often thought. A balance between ume extract and alcohol is achieved by aging the whole fruit with the stone still inside. The delicious tang of Umeshu comes from citric acid in the fruit, which also contains malic and succinic acids. The ume flavour is not only extracted from the flesh and skin but also from the stone. The result is a wonderfully versatile drink that can be enjoyed straight, over ice or in a range of cocktails. Choya does not use any artificial additives in the creation of its products.This variation includes ume fruit, sugar and cane spirit combined with an infusion of premium Japanese tea leaves from the Uji region in Kyoto.
