Following 2013's Genever inspired release, Bass & Flinders have come up with a 'Winter Gin', an apple based American style, and it's a belter at that. Bob Laing from Bass & Flinders provides some background on how it came about.

"This year we have departed from the traditional Genever process by blending a "Calvados" (two distillations ) with a grape spirit based gin that has a big influence from an amazing Orange botanical (Three distillations).  The inspiration for this Gin came from a Gin tasting earlier in the year.  An amazing Gin from Up state New York with a big burnt orange flavour. The "Calvados" was made from a cider we produced from Pink Lady/ Ganny Smith and William pears.  It sat on its lees for twelve months before we double distilled it on our Alembic still and then aged it in one of our "Cognac" barrels for twelve months. The gin was made using our Chardonnay grape spirit. The botanicals are Juniper / Coriander/ Washington Navels/ Cassia Bark and Pepperberry.  Distilled three times with the botanicals added for the last distillation."

Tasting note: Bright pale straw / gold. A big bouquet features fresh aromas of marmalade, apple strudel, cinnamon and other sweet spices. Entry offers hints of juniper before being eclipsed by a concentrated surge of baking spices over suggestions of citrus conserve. Some stewed orchard fruits here too? Finishes pleasant peppery, well balanced and with terrific length; gently bittersweet spiced orange marmalade in the fade. What next from this wonderful distillery? 40% Alc./Vol.
