Caraway seeds are excellent aids to digestion which we eat in cakes and bread and also use to flavour liqueurs. The ancient Egyptians used caraway as a remedy for an unsettled stomach. It was profusely cultivated in Holland through the Middle Ages. The earliest recorded caraway liqueur was made by Lucas Bols in his small Amsterdam distillery in 1575. Bols was a man of dedicated talent who bought a variety of skills to his trade. He gathered from many regions natural ingredients through which he passed alcoholic vapours to produce new and subtle scents. To this day, the worlds finest Kümmels are produced in Holland.

This version from Baitz has been developed for the Australian palate which favours a delicate caraway flavour as opposed to the over-powering style of many imported products. It has an alcohol content of 28%.An ideal digestive liqueur.
