2020 Hill-Smith Estate Eden Valley Chardonnay

Around 50% of this wine was wild yeast fermented and matured, for a period of 8 months, in new and 1-3 year old fine grained French barriques to add weight and texture, with the balance fermented in stainless steel to retain fruit freshness and vibrancy. Texture was further enhanced through extended lees contact.
Brilliant pale straw colour with a glimmer of green around the outskirts and a watery hue. Elevated white peach and nectarine scents mix with hints of dried honey, light biscuity oak and gun flint. Rich white peach and nectarine fruits have a fleshy feel with biscuity oak, subtle notions of dried honey and light infusions of gun flint lying underneath. Round and smooth texturally it finishes with ample freshness and a long aftertaste.
Drink over the next 3-4 years.
