Richness and hedonism are high on Dave and Callum’s agenda when they make this wine. The style is typically lower in acid and high in phenolic content, which provides richness on the palate and requisite phenolics to age. The Roussanne is fermented and aged in stainless steel to maintain acidity and fruit florals. The Marsanne component is barrel fermented in half new French oak and is lees stirred, undergoing malolactic fermentation and maturation in same oak.
Bright straw colour with a watery hue. Intense ripe apricot and peach scents jump out of the glass followed by honeycomb, crème brulee, light toast and spice. Exceptionally rich and luscious in texture this draws comparisons to the great whites of Northern Rhone with its mouthfilling flavours of spicy ripe peaches, apricots and honeycomb. Elements of crème brulee, baked apple and subtle bacon fat are also evident. Finishes dry with a balanced freshness, great power and long opulent honeyed aftertaste.
