2018 Mitolo Jester Cabernet Sauvignon

The Jester Cabernet comprises 20% Amarone fruit, dried for approximately 7-8 weeks, following the Italian appassimento technique of drying grapes on racks. Apart from adding complexity to the final wine, this process also gives the mid palate a sensuous plushness.
Dense inky black colour with a deep dark red black hue. Nosing tosses up a mix of blackcurrant, black cherry and liquorice scents which meld into black olive, dried cherries, earth and spicy dried herb notes. The rich, black fruited palate is layered with lush dried to black cherry, black plum and liquorice flavours which are underpinned by vibrant acidity and ripe chewy tannins. Vanillin cedar, scorched earth, tobacco and dried herb characters lie underneath. Excellent depth and power with a long bright black fruited aftertaste.
Drink over the next 5-6 years.
