Made with 30% whole bunch inclusion and matured in 1-5 year old French oak hogsheads for 15 months. Inky black dark purple colour with a very deep dark purple hue. Pronounced black cherry and liquorice aromas subtlety infused with clove are followed by smoky cedar and distinct blackpepper end notes. Medium to full bodied there’s a juicy, inky like feel to the fruit with blackberry and liquorice flavours dominate over subtle dried clove nuances, smoky cedar, light earth and pepper. Dry inky finish with sturdy yet fine grained tannins. Aftertaste of inky blackberry and liquorice, earth, vanillin cedar and pepper.

There is no shortage of flavour and richness to shiraz from the Pyrenees; handpicked, 30% whole-bunches in open fermenters, wild yeast, racked to French hogsheads (15% new) for 15 months ageing - beautifully modulated. Excellent colour; has a core of juicy, tangy blue and red fruit flavours, liberal amounts of spice, tar and scorched earth. Medium-bodied with finely-tuned tannins making this moreish to the last drop. Drink by 2030.
