2016 Juniper Aquitaine Blanc

Matured for 10 months in French oak on yeast lees. Brilliant very pale straw almost water like colour with greenish tinged edges. Aromas of citrus and herbaceous grassy characters overlay pencilly cedar, asparagus and spice. Light with a vibrant mouthfeel the palate has flavours of citrus intermeshed with herbaceous grassy characters, asparagus, dried herbs and spicy pencil shavings. Finishes very dry with zesty acidity and an aftertaste of citrus, herbaceous grassy characters, pencil shavings and spicy dried herbs.
Drink over the next 3-4 years.

Estate-grown sauvignon blanc and semillon, hand-picked, whole-bunch pressed direct to French oak for wild fermentation and 10 months maturation. A very complex wine, initially oaky on the bouquet, but hauled into line by the layered palate, which rolls out a thunder clap on the finish. Drink by 2022.
