One hundred percent barrel fermented using wild yeasts and matured for 10 months in seasoned French oak barriques. Brilliant pale straw colour with a greenish tinge to the outskirts and a watery hue. Elevated aromas of ripe nectarine, yellow peach and dried honey merge with nougat, hints of bees wax and lemon butter. Medium bodied with a creamy feel, the palate is filled with yellow peach, bees wax and ripe nectarine flavours which hover over a subtle back drop of lemon butter, cashew and spice. Finishes with balanced acidity and a long rich aftertaste.
Drink over the next 3-4 years.
Alc. 13%

Other Reviews….
From a dry-grown vineyard at 580m, 12 batches of different clones/rootstocks/vine age were whole-bunch pressed and fermented separately in used French barriques, 60% mlf, matured on lees for 16 months. The selection of small parts of the high density 1.6ha vineyard has given this wine a flying start, the vinification exacting and amplifying the intensity of the fruit. Structure, texture and fruit all combine to provide a palate of great length and urgency. Drink by 2029.
