The Phoenix name recognises the first winemaking company purchased by Douglas Austral Tolley , purchased in 1888. This company began in 1858, as “The Phoenix Winemaking and Distilling Company”, in Stepney, South Australia. In 1888 this was changed to “Tolley Scott Tolley” (T.S.T.) and remained with the family till 1960. D.A Tolley’s great grandson, Kym Tolley, has continued the unbroken family winemaking tradition, establishing Penley Estate in 1988. The wines have recently undergone a complete revamp of their packaging.

Totally opaque the wine displays an impressive black dark red colour with a dark red black tinged hue. The nose opens with scented blackcurrant, subtle liquorice and mulberry aromas followed by delicate vanillin cedar infusions and spicy bay leaf end notes. Medium bodied with a structural elegance that typifies Coonawarra Cabernet, the palate is blessed with beautiful rich blackcurrant fruit that sits alongside some liquorice and subtle mulberries with an underpinning of spicy vanillin cedar and traces of bay leaf. Finishes dry with structured yet fine grained tannins. Long aftertaste of blackcurrant, subtle liquorice, mulberry and spicy vanillin cedar.
