A blend of 62% Pinot Noir and 38% Chardonnay made using the saignee method. A frothy white mousse sits comfortably over a salmon pink tinged base wine that’s threaded by a very fine and persistent stream of bubbles. Refined nose with subtle winter strawberry notes melding into yeast lees and toast followed by citrus and light baked bread notes. Savoury, subtle red berry fruit flavours delicately caress the palate with underlying yeast lees, citrus and toast elements. Dry energetic finish with crisp acidity. Good length with a long elegant aftertaste of winter strawberries, pears, yeast lees, subtle toast, baked bread and a touch of refreshing citrus.
