Dalrymple are capable of producing leaner, crisper styles of Sauvy that draw comparisons with Sancerre in some vintages. This is partly attributed to their location at a latitude of 41° south, the same latitude as Champagne, which could be described as ‘cool’. The vines are now around 20 years old with varietal clones selected that ripen early in this marginal area. A small portion of this wine (12%) was aged in old French oak barriques for a period of 4 months to add some textural nuance.

Brilliant pale straw colour with greenish tinge around the edges and watery hue. The nose offers up some herbaceous grassy characters as top notes followed by some gooseberry, a hint of capsicum and some spice. The palate delivers a flavour profile similar to that of the nose with gooseberry intermixed with herbaceous grassy characters, some asparagus and a touch of citrus. Clean crisp finish with long herbaceous grassy gooseberry, citrus and asparagus aftertaste.
