Sparkling Shiraz is a unique Australian wine that’s synonymous with the Great Western region having been in production since the early 1900’s. Normally the base wine for this Cuvee is left on yeast lees in bottle for 12 months and disgorged in the traditional method, however, this wine was left on lees for an extended period of two years in order to create greater complexity. The dosage liqueur contains a small quantity of very old Best’s Liqueur Muscat.

The purple tinged frothy mousse shows excellent hold to eventually reveal a deep dark red black base wine colour. The exceptionally fine bead shows excellent persistence. Pronounced aromas of ripe blackberries and dark plums are followed by some liquorice and dark chocolate with vanillin oak background notes. Full bodied, rich and creamy the palate features mouthfilling flavours of ripe blackberries and liquorice over a dark chocolate and vanillin oak background. Superb concentration and depth with a very long ripe blackberry, liquorice, dark chocolate and vanillin oak aftertaste.
