2010 Mitolo Jester Cabernet Sauvignon
Twenty percent of the fruit for this Cabernet Sauvignon has been handled in the Amarone manner- a technique of drying fruit that adds complexity and fullness to the wine and produces soft juicy tannins. Aged in 2-4 year old French oak for 9 months. Opaque inky black colour with black dark purple hue. The nose exhibits lifted scents of ripe blackcurrant and liquorice followed by some dark mulberry, a touch of tobacco and cedar. Rich, thick in texture and very concentrated the palate boasts mouthfilling flavours of very ripe blackcurrant followed by some liquorice and cedar with a hint of tobacco and spice on the back palate. Fine grained tannins. Long ripe blackcurrant, liquorice, cedar and spice aftertaste.
Cellar 4-5 years (2016-2017).
