The fruit for this Pinot is 100% destemmed and fermented, without yeast inoculation, in open vats for 18 to 21 days. The malolactic conversion also is indigenous. The maturation period is 10 months in French oak (15% new). Semi translucent dark crimson red colour with dark crimson red mauve hue. The nose delivers a delightful perfumed sniff of dark cherry, anise and plum followed by some spicy cedar notes. Medium weight the palate exhibits flavours of dark cherry, anise and cedar followed by a spicy back palate. Very fine grained tannins. Good power wave with long aftertaste of dark cherry, dried meat, anise and spice.
Cellar 2-3 years (2013-2014).
