In only seven vintages, the Black Chook Shiraz has built up a loyal world wide following for its seductive aromatics and it's rich voluptuous palate profile. Formerly labelled as Shiraz Viognier, it is now simply labelled Shiraz despite the fact that wine still contains a splash of Viognier. Winemaker, Ben Riggs maintains that it's easy to over do Viognier when blending it with Shiraz. The variety is highly perfumed, very tannic, naturally low in acid and often reaches high alcohols (15% or more). Balancing a blend such as this is achieved by relying on the textural aspects of Viognier, rather than on the acidity alone which is the norm in white wine making.

Opaque black crimson colour with very deep black crimson hue. The nose displays good perfumed lift with aromas of liquorice, blackberry, confectionary, spice and toast. Voluptuous and rich with a supple round texture the palate is filled with flavours of ripe blackberry, dark plum and confectionary followed by a spicy back palate. Very fine grained tannins with long aftertaste of blackberry, liquorice and spice.
