Amisfield ferment their fruit in a range of tanks designed to extract different aspects of Pinot Noir. Their square tanks have been designed for very ripe, concentrated fruit and extracting the weight and depth out of the grapes. Smaller round open topped tanks are used for expressing aroma and finesse from fruit grown on lighter soils, reducing total time on skins but still optimising the extraction process. Wherever possible Amisfield also ferment the grapes with indigenous yeasts, and experiment with whole bunch fermentation and varying lengths of extended skin maceration to create additional complexity. The wine is matured in French oak for 12 months.

This wine displays excellent depth of colour for Pinot Noir. Near opaque deep dark red crimson colour with dark crimson red hue. Lifted and quite perfumed the nose displays scents of dark cherries, a touch of violet, anise, some meaty characters and lightly toasted spicy cedar. Medium bodied the palate delivers a spicy flavour profile of dark cherries, black plum, anise and dried meats followed by a spicy cedar back palate. Dryish finish with very fine grained taninns. Good power wave with long dark cherry, dried meat, anise and spicy cedar aftertaste.
