Approximately 80% of the Chardonnay batches for this wine were wild fermented with the balance inoculated with yeast. The vast majority (86%) of this wine was matured in French oak barriques, of which 42% were new, for a period of 9 months. Lees stirring was employed throughout maturation to provide further complexity, texture and palate weight.
Bright pale straw colour with straw hue.
Lifted nose of yeast lees, followed by melon, cashew and biscuit, Showing
strong varietal and barrel ferment character. The palate delivers flavours of
grapefruit and yeast lees, followed by biscuit. Clean acid backbone.
Grapefruit, yeast lees, spice and biscuit aftertaste.
