While 'joosy', ripe, full bodied Shiraz wines from McLaren Vale have captured the world's imagination, the region is also known for other varietals (as well as offering a complimentary set of experiences that characterise its superb food and wonderful hospitality!) In the hands of a McLaren Vale dream-team, Cabernet Sauvignon realises a distinctive expression that's different to that of Coonawarra or other traditional Cabernet regions.

The fruit for this wine was sourced from vines planted in 1993 by Penny Hill's proprietors, Tony and Susie Parkinson and managed by local viticulturalists David Paxton and Toby Bekkers. Picked over different days to allow for optimum ripening, each parcel was kept separate through the winemaking process. This allowed winemaker Ben Riggs to assess various components before final blending. Top quality French and American barrels were employed with the wine spending approximately 16 months in a combination of new and one year old oak.

An outstanding Cabernet. Very deep, almost opaque black crimson colour with black crimson hue. Superb cassis, violet and blackcurrant nose with nuances of dark chocolate, spice and cedar. The palate is impressive with layers of blackcurrant and spice, followed by hints of black pepper, dark chocolate, blackcurrant, cedar and cassis. Perfect balance. Very long aftertaste of cassis, cedar and spice.
