Serpico is a 100% Cabernet made in the Amarone method. The grapes were left to dry on the 10 kg drying racks for 5 weeks in the traditional Amarone manner resulting in 30% bunch weight loss. The wine was then fermented on skins for 2 weeks and left to macerate for a further 3 weeks prior to pressing. Maturation took place in a combination of 80% new French oak and 20% French coopered American oak. A total of 16 coopers are used for the oak regime.Retasted 2nd March 2010:
Deep dark crimson red colour with brick red crimson hue. The nose displays aromas of ripe black cherry, dried raisins and dark plum followed by some dark chocolate and liquorice end notes. The palate is very ripe, thick and voluptuously textured with flavours of liquorice allsorts, dark chocolate, spice and jammy blackcurrant. Fine grained tannins with aftertaste of plum jam, dark chocolate and spice.
