2007 Mitolo Serpico Cabernet Sauvignon

Serpico is a 100% Cabernet made in the Amarone method. The grapes were left to dry on the 10 kg drying racks for 5 weeks in the traditional Amarone manner resulting in 30% bunch weight loss. The wine was then fermented on skins for 2 weeks and left to macerate for a further 3 weeks prior to pressing. Maturation took place in a combination of 80% new French oak and 20% French coopered American oak. A total of 16 coopers are used for the oak regime.

Retasted 2nd March 2010:
Deep dark crimson red colour with brick red crimson hue. The nose displays aromas of ripe black cherry, dried raisins and dark plum followed by some dark chocolate and liquorice end notes. The palate is very ripe, thick and voluptuously textured with flavours of liquorice allsorts, dark chocolate, spice and jammy blackcurrant. Fine grained tannins with aftertaste of plum jam, dark chocolate and spice.

14.5% Alc First Tasted: 1st July 2009:
A generous McLaren Vale Cabernet. Very deep crimson colour with deep crimson hue. Top note of blackcurrant, followed by cedar, cassis and liquorice all sorts. End notes of violet and spice. The palate is generous, filled with ripe Cabernet fruit flavours of dark chocolate with a hint of mocha over a layer of cedar and blackcurrant. Very spicy back palate. Fine grained tannins. Long aftertaste of spice, dark chocolate, blackcurrant and cedar.
