This rich, toasty sparkling has a frothy white mousse that slowly dissipates to reveal a pale straw coloured base wine with golden edges and a very fine bead that shows excellent persistence. Rich aromatics drift from the glass with baked bread, honey and toast merging into some yeast lees characters followed by roasted almond like end notes. The palate reflects the nose, quite full and richly flavoured, yet still fresh and vibrant. Mouthfilling baked bread, oily toast like characters and yeast lees overlay roasted almonds with a burst of fresh citrus on the crisp dry finish. Creamy like texture with a long, rich conclusion of baked bread, oily toast like characters, citrus, yeast lees and roasted almonds.
Drink over the next 3-4 years.

Hand-picked in the early morning, whole-bunch pressed, cool-fermented in tank and barrel, then in traditional method in bottle. It is cruising along peacefully, its crisp acidity underpinning the richness developed during 9 years on yeast lees prior to disgorgement. Spice, dried and fresh fruits provide texture and flavour.
