Opaque black crimson colour with black crimson hue. Perfumed aromas of violets, blackcurrant, dark plum, cedar and spice – a superb Cabernet sniff. The palate is again very tightly knit with a firm, dry tannin structure. Flavours of ripe blackcurrant, plum, spice and cedar with a very dry, astringent finish lacking the power of top vintages. Aftertaste of blackcurrant, spice and cedar.

The 2007 Cabernet Sauvignon Hickinbotham offers the most saturated color. The aromatics feature Asian spices, violets, and incense along with expressive black fruits. Structured and tannic, bordering on austere on the palate, it is a muscular, brawny effort that will require 6-8 years of cellaring to become approachable.
