For his Cabernet Sauvignon’s winemaker Roman Bratasiuk draws his inspiration from the Classed Growths of Bordeaux. The sub-district of Clarendon lies 10 km north east of the McLaren Vale township and is 250 metres higher above sea level. Consequently, the region picks 2-3 weeks later than McLaren Vale and generally enjoys longer, milder ripening conditions, ideal for the production of Cabernet Sauvignon.
The 2006 vintage in Clarendon experienced a 'Mediterranean finish' to what was otherwise a typical Australian summer. The earlier onset of Autumnal coolness slowed ripening towards the end of the harvest season and enhanced colour development and skin thickness. Hand picking occurs over several passes to ensure optimal ripeness of the fruit. Fermentation takes place using wild yeasts, followed by extended maceration. This wine was matured for 18 months in 75% brand new, tight-grained French Oak and 20% 1-3 year old oak.

Impenetrable black as night heart with a deep very dark red black hue. Nosing reveals a delightful aromatic profile of ripe blackcurrant and mulberry fruits which meld effortlessly into vanillin cedar, tobacco, earth and spicy bay leaf like notes. Rich and concentrated the palate has evolved beautifully with time. Ripe blackcurrant and mulberry fruits are delivered with terrific depth and power. Tertiary characters of vanillin cedar, tobacco, earth and spicy dried herbs adding complexity on the back half. The ripe but still present tannins have integrated well with bottle age now showing much more polish. Concludes long, ripe and savoury with more than ample sophistication for the price.
