Produced from a blend of 50% Pinot Noir, 46% Chardonnay and 4% Pinot Meunier sourced from the Yarra Valley, Strathbogie, the King and Buffalo Valleys (Victoria) and the Coal River Valley (Tasmania). The wine spent over two and a half years ageing on yeast, was disgorged in February 2008, and was given a further three months bottle age before its release.
The wine pours well with persistent creamy white mousse. Very fine persistent bead with light straw base wine colour. The nose presents aromas of brioche and lemon followed by some subtle yeast lees and toast notes. Creamy texture with flavours of lemon, yeast lees and biscuit followed by some cashew and toast. Clean crisp dry finish with long creamy aftertaste of yeast lees, biscuit and cashew.
A very refined Chandon.
