Hand picked Shiraz fruit was selected from six vineyards throughout the Leasingham Valley with each being fermented separately, basket pressed and aged for 22 months in a combination of new and older French and American small oak casks.

A superb Covenant Shiraz!

Totally opaque black crimson colour with black crimson hue. Perfumed nose of violets and spice followed by confectionary and liquorice, delivering an excellent sniff. The palate flavours are totally mouthfilling. Layers of liquorice, vanilla and confectionary fill the palate and are supported by toasted oak. Fine grained tannins, perfect balance. Very long aftertaste of vanilla, liquorice and blackberry.

The 2005 Shiraz “Covenant” from the Clare Valley was aged for 22 months in French and American oak hogsheads, 30% new, and bottled unfined and unfiltered. It exhibits cooler climate hints of mint and menthol, as well as mineral, pencil lead, blueberry, and blackberry liqueur. Elegantly styled, with excellent depth and concentration, it will evolve for 3-4 years, and drink well through 2020
