Very deep crimson colour with deep crimson mauve hue. The nose is more perfumed than the Georgia’s Paddock, which can be attributed to the inclusion of Cabernet Franc in the blend. Top note of truffle, followed by raspberry, spice, liquorice and violet. On the palate flavours of blackcurrant, raspberry and white pepper are supported by a hint of cinnamon and quite dry, fine, persistent tannins. Spice and confectionary aftertaste.

The 2005 Shiraz “Emily’s Paddock” offers greater aromatic complexity, more structure, and gobs of supple, ripe, sweet fruit. Give it 5-7 years to blossom and drink it through 2025. Jasper Hill is one of the top guns in Heathcote. The winery practices organic viticulture, dry farming, and has recently entered into a joint venture with Michel Chapoutier to develop a vineyard adjacent to the existing property.
