An excellent example of fully ripened, cool climate Shiraz with both elegance and an abundance of flavour, backed up by a white pepper component.

The parcels of fruit for this wine were “cold-soaked” prior to fermentation with specific yeasts isolated from the best Rhone vineyards. This pre-ferment treatment permits a gentler extraction of tannins, whilst enhancing the fruit intensity. The wine then underwent malolactic fermentation and 18 months maturation in an equal mix of new and one-year old French oak barriques.

Almost opaque black crimson colour with black mauve hue. Superb lifted nose of black pepper, white pepper, spice, violets and blackberry delivering a powerful lift. The palate does not disappoint. The refinement of style is enhanced by the black and white pepper components which are married to a layer of spice, blackberry and cherry. Perfectly balanced fine tannins are followed by a very spicy aftertaste.
