2004 Warrabilla Limited Release Parola's Cabernet Sauvignon

A concentrate of Cabernet. The wine has been matured for 10 months in new French oak puncheons. The wine delivers a total saturation of black crimson colour with black crimson hue and manages to cling to the glass like paint. The fruit is very ripe but like all of Andrew Sutherland Smith’s wines, there is no sensation of hot alcohol in spite of the wine being 16% Alc/Vol. Lifted nose of spice, liquorice and very ripe blackcurrant. Full bodied palate with again, loads of ripe fruit flavour. Cedar, dark chocolate and black pepper explode on the palate over a liquorice allsorts background. Fine, dry tannins. Long aftertaste of chocolate, spice, cedar and plum.
