This wine was made using the maceration carbonic method, whereby the whole grape bunches are placed in a fermentation tank, and gradually break down, after which time the remaining whole bunches are pressed. The result is a highly aromatic wine. Translucent, mauve purple colour. Lifted nose of spice, fresh raspberry, raspberry jube and liquorice. The initial impact of the palate shows a fruity flavour profile, yet there appears to be a conflict between the Grenache and Cabernet grapes – the two are not quite in step, and perhaps the proportions of the blend might change to create a better integration. Strong spice and cherry raspberry flavours emerge, with a hint of residual sweetness. Dry, stewed fruit and cherry finish.
