Latin scholars will immediately know that Merum is Latin for ‘pure, undiluted wine’. The Romans were partial to ‘cutting back’ some of their drinks – it seems in Australia, the addition of water to wine is prohibited by law, with the green snake being definitely a no-no.

This is an outstanding example of ripe Semillon. Brilliant straw colour. Aroma of confectionary followed by a hint of spice, anise, cut hay and tropical fruit. The palate has plenty of body and again no sense of any unripe flavours emerging. Tropical fruit, spice, pear and confectionary emerge. Clean acid finish. Perfect balance with a long confectionary, ripe pear aftertaste.
