2001 Chimney Rock Cabernet Sauvignon

An outstanding Californian Cabernet. The colour is much less dense than that of Australian Cabernets, however, the flavour profile is a delightful experience. Deep crimson colour with crimson hue. Superbly refined nose of violets, blackcurrant, cassis and cedar. The palate is a statement of refinement and sophistication. Flavours of cedar, blackcurrant, liquorice, dark cherries, spice, and “hundreds of thousands.” Velvet smooth tannins, with outstanding length and aftertaste of blackcurrant, confectionary and spice with nuances of black pepper and dark chocolate emerging. Expensive but worth it!
