2001 Avonmore Estate 'Rachels Red' Cabernet Sauvignon

This is one of a number of biodynamic wines that are appearing onto the market place. The farming practice is conducted on eco-safe biodynamic methods and certified Demeter by the Bio Dynamic Research Institute. Very deep crimson mauve colour with crimson mauve hue. Aroma of toasted oak, spice and earth, with just a hint of tar and a touch of volatility. On the palate flavours of ripe stewed plum, followed by a hint of confectionary on the back palate. The tannins are fine, dry and linger long into the aftertaste. The volatile nature lingers long into the aftertaste. The volatile nature of the wine persists and reasserts itself over an arromint aftertaste.
