Wildwood has produced some excellent Bordeaux like wines in the past, and they have matured well. The Sunbury climate is marginal for Cabernet, and one of two things have to happen. Either the Stott’s reduce the yields to a level that will fully ripen each year, or they graft over to another variety. Canopy management is critical in this vineyard along with cropping levels.
Medium body, brick red colour. Aroma of stewed fruit, spice with hints of tea, spice and blackcurrant. On the palate unripe cabernet flavours emerge, with menacing vegetal characters. Fine firmish tannins, followed by a green herbaceous aftertaste. Cellar 1-2 years.
