Grape Varieties:90% Garganega and 10% Saorin. In the past these white wines were used to soften the Recioto. Now the trend is to use them by themselves to obtain a dessert wine.
Region:The grapes are grown in close proximity to the red grapes in the classic Valpolicella zone in the north east region of Veneto.
Vinification: Grapes are hand harvested late September and are placed on plastic trays for drying. During the drying process that lasts about 4 months, the grape bunches lose 30-40% of their weight and reach 27% sugar concentration. The grapes then undergo normal white wine fermentation using wild yeast for about 25 days. After fining and decanting, the wine rests for 18 months in Allier French barrique. A final year in the bottle before release achieves characteristic structural and aromatic balance.
Characteristics:Clear yellow in colour with slight notes of gold. The bouquet is reminiscent of vanilla, cinnamon and floral blossoms. The palate is pleasant with concentration and length. It is well balanced and displays in addition to the sugar, excellent structure and a lively acidity that make it both refreshing and pleasing.
