Grape Varieties:30% Corvina, 30% Corvinone, 30% Rondinella, 10% Molinara, Rossignola, Oseleta, Negrara, Dindarella.
Region:Commune of San Pietro, Cariano in the Valpolicella Classico zone in the province of Veneto.
Production: Grapes are harvested by hand at the end of September beginning of October and are placed in wooden trays for drying. The drying is done for about four months at controlled humidity and temperature, preventing formation of Botrytis. During the drying process, the bunches lose 30% of their weight and sugar concentration reaches 25%. In January a roller press gently presses the grapes and slow fermentation takes place in steel vats at a temperature of 15°C over a period of forty days. At the end of fermentation, the wine is put into Slavonic oak barrels and is aged for two years. The wine is then bottled and kept for a further six months before release.
Characteristics:Strong ruby red in colour and clean. The bouquet has a subtle vanillin character deriving from the oak and aromas of sweet fruits such as currants, blueberries and cherries and spice. The palate is strong, rounded and warm. It is well balanced with hints of the fruits present in the nose. It has an enjoyable and persistent flavour.
Serve:16° Celsius and decant if desired
