Inspired by the Old World Winemaking of Burgundy, this wine has been hand made using open fermenters, hand plunging and minimal racking to maximise flavour.Deep crimson mauve colour. Excellent nose with aroma of cherry spice and plum, over subtle toasted oak. The wine displays impressive palate weight and a fair degree of complexity which should build over time. Flavours of cherry, spice and rhubarb dominate the palate, supported by fine grained soft tannins and followed by a long cherry, rhubarb and spice aftertaste. Cellar 3-4 years.
