Grape Varieties:34% Corvina, 33% Corvinone and 33% Rondinella.
Region:Corvina from the Marano Valley, Rondinella from the Negrar Valley and Corvinone in the Fumane valley situated in the Valpolicella Classico zone in the region of Veneto in the north east of Italy.
Vinification: Grapes are select harvested at the end of September and placed in wooden crates to dry for about 4 months in controlled temperature and humidity. The grapes are continually inspected during this time for mould and 40% of their weight is lost. This partial dehydration enriches the sugar content and complexity of the final wine. The grapes are pressed using a roller press and fermentation takes place in stainless steel tanks over about 40 days. After bottling the wine is aged in barrique for two years and then a final year in the bottle before being released.
Characteristics:Strong ruby red in colour with hints of vanilla. It also has notes of sweet fruits such as currants, blueberries and cherries. It has a unique hint of honey in the flavour and an exceptionally long and persistent flavour.
Serve:at room temperature
